Vegetarian Minestrone
Make a sofritto of onion, carrots, celery, garlic, parlsey
(Sofritto : basically chop everything small, sauté the onions and garlic until softened then add the celery, carrots and parsley and sauté it down for as long as you can bare).
Add courgette( zucchini) stir around with the soffritto for a couple of minutes.
Add chopped tomatoes, sun dried tomato and/or tomato puree
Add tin of cannelloni beans
Veg stock,
A little dried pasta ( I used tofie)
Fresh green beans
Fresh oregano and flat parley
Throw in an old Parmesan rind
Salt & pepper to taste
Simmer for an hour or two.
Before serving throw in some chopped baby spinach leaves or Swiss chard
Giant croutons
ciabbata cut to pieces, roll around in some garlic olive oil then toast
Finish with
Parmesan
a little olive oil

Anyone have any favourite veggie variations of this, feel like eating it all winter.
LESS precious version.
Saute some chopped onion, garlic carrots and celery.

add some tomatoes (sure tin of chopped is OK)
Add a pint or two of veg stock
throw in something free, beans, peas...
add some beans
add some pasta, even broken up spaghetti is OK.
cook for an hour
throw in some herbs and seasoning and some green salad leaves
eat with bread.
...if it's hot it'll still be comforting.
